Maceration and alcoholic fermentation in stainless steel temperature regulated tanks.
Daily pumping over and cap dipping enable a delicate extraction.
Ageing and malolactic fermentation in 600 liters barrels (demi-muids) for 12 months.
Blending before bottling.

Appearance: A brilliant Burlat cherry-red appearance, beautifully intense, include a purple fringe.
First nose: Fine and greedy concentration of black fruits (blackcurrant, blueberry), spices (pepper) with a hint of toffee.
Second nose: Upon aeration, a complex strength with a mature expression and rich aromas of stewed fruits, spices (cinnamon), vanilla and cedar. Very aromatic wealth.
Palate: Full bodied attack with fine tannins, reinforced by fond acidity.
Mid-palate: scented notes of ripe, toasted bread and liquorice, violets and coffee scents.
End of palate: tonic and persistent with a young bitter, sweet spices and pine scents.
Great potential of aging.
