The wine

Manual Harvest. Maceration and alcoholic fermentation in temperature-controlled stainless steel tanks.
Daily pumping over and marc cap immersion for sweet extraction.
Ageing and malolactic fermentation in 600 liters barrels (demi-muids) , 2/3, for 12 months. Racking. This vintage has not been filtered to preserve the finesse & complexity of the aromas.

Blending before bottling.

Tasting notes

Appearance: Bright, limpid  garnet-red color with slight violet nuances.
First nose:  Concentrated & refined, with aromas of stewed fruit (cherry, strawberry) and light spicy notes (black pepper).
Second nose: On aeration, the nose opens up to a generous aromatic complexity of fruit (Morello cherry), spices (clove, pepper), cocoa & tobacco leaf.
Palate: A frank attack of red fruit, combined with optimal ripeness, reveals present, tempered tannins.
Mid-palate: Full and round, with aromas of stewed black berries (blueberry), licorice & sweet spices (pepper).
End of palate: Long, leaving the palate dense & powerful, with finesse & precision.
