Manual Harvest. Maceration and alcoholic fermentation in stainless steel temperature regulated tanks.
Daily pumping over and cap dipping enable a delicate extraction.
Ageing and malolactic fermentation in 600 liters barrels (demi-muids) , 2/3, for 12 months.
Racking and blending oak barrels / tanks before bottling.

Appearance: A brilliant and limpid ruby-red appearance, beautifully intense, include a purple fringe.
First nose: Intense and expressive joining a complex fruit (stewed strawberry and small black berries).
Second nose: Upon aeration, the nose opens up with a mature expression revealing a delicate spicy note (cinnamon).
Palate: Supple & generous approach give a greedy balance.
Mid-palate: Round to the taste, black fruits aromas of black berries (blackcurrant, blueberry) and present tannins.
End of palate: Dense and powerful architecture with spicy nuances.
A Sancerre Rouge wine full of finesse and a careful vinification.
