Manual harvest. Pneumatic pressing.
60 % in oak barrels (600 liters demi-muids) Fermentation using natural yeasts. Aged for 12 months in barrels (demi muids) with regular stirring (batonnage).
Racking, blending before bottling.
Appearance: A brilliant appearance, shiny and crystalline, a pale yellow hue with hints of bright gold.
Nose: The initial impression on the nose is rounded and dense with exotic fruits (mango, litchi) and scents of fresh herbs (verbena, lime tree).
Second nose: Upon aeration, the nose reveals a gourmet complexity (brioche) enhanced with spicy touches (cinnamon) and toasted almonds.
Palate: Dense and crunchy attack (mango), flavoured with quince paste, spices.
Mid-palate: opens with fresh notes (lime tree, orange flowers), honey nota.
End of palate: Round and persistent giving a feeling of richness and complexity.
A Sancerre Blanc of character and refined.
