Fermentation in barrels (600 liters demi-muids) using natural yeasts.
Aged for 12 months in barrels (demi muids) with regular stirring (batonnage).
Blending before bottling.
Appearance: A brilliant appearance, shiny and crystalline, a pale yellow hue with hints of bright gold.
Nose: The initial impression on the nose is rounded and dense with vine peach, acacia and quince aromas.
Upon aeration: The nose reveals a strong complexity of ripe fruits (pear), fresh herbs, enhanced with floral touches (rose) and toasted almonds.
Palate: Warm attack and a tasty, optimal maturity on citrus zest, fresh fruit and pineapple canvas.
Mid-palate: Gourmet with honey and cedar hints. beautiful minerality of end of palate, perfect balance. A smooth finish for the palate, combinaison of wood favored tastes: Citrus peel, vanilla and sweet spices (cinnamon).
